Pāua Pattie by Peter Gordon from Homeland
Serves 4 – 6 as a starter, makes 15 fritters.
INGREDIENTS
400g minced pāua (2 tubs)
½ medium red onion, diced or thinly sliced
2 spring onions, thinly sliced
2 tsp finely chopped ginger
1 ½ Tbsp gluten free flour (wheat flour also good)
½ tsp baking powder
2 eggs, separated
Butter and oil for frying the fritters
1 lemon, cut into wedges (optional)
METHOD
1. Mix the pāua with the onion, spring onions and ginger, ¼ tsp salt and plenty of freshly ground black pepper
2. Sprinkle on the flour and baking powder and mix in
3. Mix in the egg yolks
4. Beat the whites stiff with a pinch of salt and fold in
5. Fry in butter with a little oil
6. Serve with lemon wedges
