The mouth-watering smell of garlic, butter and crayfish over the flame is hard to beat on a warm summer’s day. And what could be more Kiwi? This barbecued crayfish recipe is quick, delicious and contains no more than three ingredients; it’s how we enjoy our Chatham Cray Tails here on the island.

- Garlic Mince
- Butter
METHOD
- Mix through butter & garlic mince.
- Sear the flesh side on BBQ then turn over and spread garlic butter over the meat.
- Cook like this for approx. 10min (key is to not over cook)
